The big Colorado news of the day was Casa Bonita filing Chapter 11 bankruptcy. Many people feared this was it for the iconic restaurant, so they want to help.
The famous eatery actually filed on April 6, and Chapter 11 really allows a debtor to propose a plan of reorganization to keep its business alive and pay creditors over time. Businesses can also seek relief under Chapter 11. Therefore, this is good news for fans of the restaurant that has been shuttered since the pandemic began.
Still though, there will be a "Save Casa Bonita" rally happening from 10 a.m. to 2 p.m. on Saturday, April 17, on Colfax, outside of the restaurant.
There is also a GoFundMe page that has already raised almost $17,000 of its $100,000 goal.
I am all about helping a local treasure, but if I donate, do you think I could convince them to change the enchiladas up a bit?
